We do not eat many desserts, but from time to time, we have a sweet desire and there is nothing in the house or it is too late to fix something. The first recipe I'm going to share is for a fair occasion.

3-2-1 Cake

This little jewel is a single serving of pure delight. You can make it as simple or as elegant as you want.

Ingredients:

1 box Angel Food Cake Mix

1 box of regular cake mix, your choice of taste

In a re-sealable bowl, combine the two cake mix boxes. Keep sealed when not in use. The mixture can be stored in the pantry or the freezer.

3 tablespoons cake mix

2 tablespoons water

Microwave on high for 1 minute.

Easy peach crumble

I love the peaches and next to the strawberries, they are my favorite fruit. I at home can my own peaches so I am not sure the exact size of the canned peaches you need, but you will need a large can (maybe 46 ounces?) Or 2 small cans. It does not matter if you receive heavy or light syrup because the peaches will be drained.

1 box of white cake mix

1 large peach sliced

Cover:

1 stick or margarine butter, softened

1 cup of flour, sifted

1 cup of sugar

1 teaspoon cinnamon

Preheat the oven to 350 degrees F.

Make the cake mix according to package directions. Spread the dough in a greased and oblong baking pan. Drain the peaches and layer slices on top of the cake batter.

In a bowl, combine the sifted flour, sugar and cinnamon. Add butter or margarine. With the fork or pastry mixer cut into butter until you have thick crumbs.

Sprinkle the crumb mixture evenly over the top of the cake and the peaches. Bake for 30 to 40 minutes or until the topping is brown and the knife comes out clean when inserted into the cake.

Cover with ice cream or a topping. Keep the leftovers in the refrigerator.
